1. One cup of raw kale contains nearly 700% of your daily value of Vitamin K!

Kale is literally one of the most nutrient dense foods on the planet. Vitamin K is one of those underrated vitamins, probably because it's closer to the middle of the alphabet (just kidding!) Vitamin K is a fat soluble vitamin that's most commonly known for its role in blood coagulation. But more recently, in the past several years, Vitamin K has shown to play a role in cognitive functioning. 

2. Kale is one of the best sources of Vitamin C.

In fact, one cup of raw kale contains more vitamin C than an orange! Mic drop. We all know the tremendous benefits of vitamin C for the body, but just remember that vitamin C can be temperature sensitive.
