A good charcuterie board is made with love...and lots of fun ingredients! When I’m in a rush, I like to choose 4 elements to highlight in my low-carb charcuterie board: 1 meat alternative, 1 cheese, 1 low-carb fruit, and 1 nut.

Deviled eggs are rich, creamy, and delish! Sometimes I like to lighten things up a bit, and instead of using the classic mayo, I combine egg yolks with avocado, lemon juice, and paprika. Drizzle with sriracha for a spicy twist!

The key to a good kale chip is the seasoning and the “crispiness factor.” Am I right? Bonus! Kale chips are super simple to make. Toss your kale with olive oil on a baking sheet. Sprinkle your preferred seasoning of choice. I like onion powder, garlic powder, and my top secret ingredient: turmeric powder! This golden, warm spice will give your kale chip a real kick, and an anti-inflammatory boost! Bake for 20 minutes or until crispy.

2. Cottage Cheese W. All the Fixin’s
An oldie but a goodie! Jazz up your ordinary bowl of cottage cheese with fresh berries, nut butter, and spices. I like to add a spoonful of peanut butter or cashew butter, strawberries, and raspberries, and of course a sprinkle of heart-healthy cinnamon!
3. Keto Nut Clusters
I love chowing down on a handful of nuts. But before I know it, I’ve eaten the whole bag! Anyone else resonate? These Keto Nut Clusters are the perfect portion size. To make these sweet & crunchy clusters, simply melt unsweetened dark chocolate chips in a big mixing bowl. Add almonds, pecans, walnut halves, and cashews until all the nuts are well-coated. Line a baking sheet with parchment paper and start scooping the nut mixture onto the paper, 1 Tbsp at a time. Refrigerate for an hour, and voila!
